Marburg continues to grow as a brilliant road trip destination in south-east Queensland and one of the region’s newest drawcards is an award-winning gin distillery.

Imbibis Artisan Distillery was launched in December 2019 by wine-maker Jason Hannay and his wife Maree. They promptly scooped two silvers at the 2020 Australian Distilled Spirits Awards for their signature gin and a shiraz brandy.

“I call it my winemaker’s gin,” Jason says of that first creation, aptly named Clarity.
“It has all these lovely flavours that blend well, with a really smooth finish… it has bottle brush flowers and homegrown lemon myrtle and homegrown galangal.

Two more creations followed; a Pink Gin and a London dry style called The Three Myrtles with anise, lemon and cinnamon notes rounded out with olive leaf from a specifically chosen tree at Cedar Gully Olives in nearby Mulgowie.

Jason was mentored in his early days as a winemaker by Master of Wine Peter Scudamore-Smith and he went on to make wines for Warrego Winery and Flinders Peak Winery.

Imbibis is open by appointment for tastings and tours for $10 per person. You’ll also find Imbibis at selected restaurants, including Dovetails and Pumpyard in Ipswich, and specialty liquor outlets around Queensland.
